Oral Health Part II

Remember that our whole GI system is connected. Taking care of our mouth takes care of our whole body. Again, I will list a few suggestions from the book “Healthy mouth, Healthy body” by Dr. Victor Zeines.

1. Persistence pays off. A disciplined program of oral hygiene that includes brushing at least twice each day pays great oral health dividends. This can include the use of flossing and a water pick, which can reap benefits as well. This works because it massages the gums. Gum massage is beneficial as well.

2. Consider anything that can improve your immune system like vitamins, minerals & herbs.

3. Valuable tools typically include regular visits to your dentist.

4. Eat high fiber foods like vegetables and fruit. Especially your daily apple!

5. Juice fasts & or cleanses assist in removing toxins from the body. When we remove toxins we therefore, improving oral health & hygiene. Other detoxification methods like skin brushing can also aid in removing toxins.

My biggest adversary has at times been my husband. I love him dearly but he expresses in obvious & passive ways that he does not like the fact that I suggest for our daughter to have broccoli for breakfast. Maybe he does not like it because he is the one making breakfast.
Why is he making breakfast? He has great breakfast skills and determination to do so, and I for years had not been able to get up in the morning. (don’t tell him but that is changing) He is making breakfast b’c, he used to make breakfast every morning for his two younger brothers and well that is a another story.
Sometimes when we are changing our diet our body or our family members resist, get mad or just plain don’t like it! This may be obvious in their behaviors, attitude and demeanor.
Maybe they are in the middle of tax season. Maybe they just had a bad day. In the past I could not move through the energy of my significant other resisting my efforts. Today I have become stronger and stronger. A great diet brings me the gift of being grounded and ready to accomplish anything. As I, in spite of all else, make what gives me high energy, fortitude & deep conviction knowing that this works without a doubt. I am moving through it all today.

Organic Veggie Pizza
Sauté garlic, shallots, zucchini, yellow squash, sliced Portobello mushrooms, and tomatoes. In a separate pan sauté arugula.
Warm two olive oiled rice tortillas in the oven at 400 degrees for 2 minutes. Take out and top with sautéed arugula, Celtic sea salt, pepper, and veggies from above. Cook on baking pan at 400 degrees for 5-8 minutes.

AWE FILLED DAYS & GREAT FOOD

This holiday weekend I had the privilege to be present with and embrace a glorious new friend. I am thankful to the friend who was the conduit for this union to occur. I also had the fortunate experience to provide service in my work, share time with loved ones, prep & plant my new veggie garden, connect with great friends, hike twice and run for almost an hour!

Re food:
A few friends pleasure is chocolate. Mine is both chocolate on rare occasions & great food that energizes and nourishes me in every way. When my energy is really open and flowing the food I make for my family flows effortlessly and tastefully.
I would like to share two new recipes from my table to yours.

Eat Love…
Organic summer salad

2 Avocados
2 Tomatoes
2 Cucumbers
¼ cup Sunflower seeds
2 Tbsp Hemp oil
2 Tbsp Lime juice
2 Tbsp ground flax seed

If possible let marinate for 2 hours before serving
Sprinkle with coconut flakes before serving

Ahhhhhh Mmmmm ;)

Food Inc.

The movie Food Inc. is in Newburgh NY.

It is time for you to get out to the big “Yellow Bird” building and see the little movie “Food Inc”. The Downing Film Center is showing the movie all week until next Thursday. You can call ahead to reserve your tickets. The theater is great because you can sit back in old easy chairs and be comfy cozy. Look up the Downing Film Center in Newburgh NY.

In thinking about seeing this movie it makes me think about changing our eating habits, denial, and what nourishes us. Yes, some of us are in denial and we like it. It’s okay. We want to stay where we are. You’ve heard it before some of us don’t like change.
Yet, there are a few of us that do like change and taking risks. Now I love taking risks. This for me is the only way of being fully alive. Not too long ago I did not like change as I ate the same old foods for years and years, driving home from work eating cheese doodles. Now I cannot even phathom the orange on my fingers, in my mouth or even the smell of cheese doodles in the car.

When I work with clients I ask them, “What are you willing to do?” Some of them are ready to make the dietary changes and some of them are not. No judgment. Any step towards progress is progression, right? Buying and eating the frozen veggies rather than the microwave dinner may just be our progression this week, month or year.

Then again who wants to get real? Who wants to live an honest life of what is really going on with food in our country and the world? The problem now is that like the banking industry the food system of what was working is no longer working. We are starting to wake up and know what we are eating is not actually food.

A little self-discipline can go a long way. Like I should talk. I know that when I eat a little chips and salt my neck hurts and there I did it again. But what do we do when we do not have the discipline? We can go see a movie like Food Inc. let it resonate, percolate & change our lives. Yes, we are human and “every moment is a choice” as my friend Arthur would say. Every moment we decide for or against denial, change or nourishment & whether or not to be fully alive.

Co-producer of the movie is Eric Schlosser.
I have not spoken to Eric Schlosser in two years but what an impression he left on me. Eric Schlosser wrote the book “Fast Food Nation”. It was not his book that left the impression; it was him and his energy. He walked across the stage of Time Warner Center to present to the 1000 peers in my nutrition class, started to talk from his heart, took out from his back pocket some folded yellow ledger paper and began to tell us the story of our Fast Food Nation. I heard peace and stillness in his message. It resonated in his work, and emanated from his being.

After his talk we spoke for a while about the dangers of cloned meat, school food and Michael Pollan. He also shared with me that his spiritual practice is spending hours in nature.
When one is as grounded as the earth may it spread so that we all be still and one with nature. When you see this movie may it stir your heart and the soft tiny voice be heard within your soul so that you may know “What really nourishes you?”

I hope you are looking forward to my cooking classes. I cannot wait to play and have fun with you all.

I am hosting one monthly class at the Grail in Cornwall-on-Hudson, NY if the classes have more than 7 people or at another location if less than 7 people.

The Grails property hosts a large house called The Phoenix, an attractively furnished Victorian manor with four to five meeting areas, a large kitchen, a breakfast room, a dining room. It offers a tranquil setting conducive for small groups of 15 – 30 people to come together to create.

Phytic Acid Prevents Digestion

Whole grains contain phytic acid in the bran of the grain which combines with key minerals, calcium, magnesium, copper, iron, and zinc. The phytic acid prevents the absorption of the minerals in the intestinal tract. This makes it more difficult to digest properly. Soaking, fermenting, or sprouting the grain before cooking or baking will neutralize the phytic acid, releasing these nutrients for absorption.

The soaking of the grain allows enzymes, lactobacilli and other helpful organisms to not only neutralize the phytic acid, but also to break down complex starches, irritating tannins and difficult-to-digest proteins, including gluten. For many, this may lessen their sensitivity or allergic reactions to particular grains. Everyone will benefit, nevertheless, from the release of nutrients and greater ease of digestion.

How to Soak

1. The first stage of preparation is to soak the whole grain flour in an acid medium and liquid. The basic idea is to soak all the flour with the liquid ingredients and 1 Tbsp of an acid medium per cup of water called for in the recipe.

Acid mediums options include: cultured buttermilk, kefir, cultured yogurt, whey, lemon juice or vinegar. Dairy product acid mediums must be cultured!

- Brown rice, buckwheat, and millet do not have as high of phytate content and thus need only be soaked for 7 hours (these are great last minute grains if you forget to soak, won’t be a big problem – also recommend purchasing brown rice pasta for this reason as well)

-All other grains (whole wheat, spelt, kamut, oats, etc) should be soaked from 12-24 hours, with oats have the highest level and best soaked for 24 hours.

2. Leave your grains soaking at room temperature on your counter. Cover tightly with plastic wrap, or with a plate to prevent it from drying out. After soaking, you add the remaining ingredients, if required, and proceed with recipe.

Another benefit I have found to soaking is that it absorbs the liquids and expands the grains, making a larger quantity in the end. This is very true especially with soaking oatmeal. If you forget to soak, it results in a smaller batch, but if you do soak it increases the quantity and is more satisfying and filling as well. This will obviously extend the food budget and the satiety of your family. Whole grains overall are much more satisfying and fill you up longer than white products…so once again, more value for your money!

Brown Rice

2 cups short grain brown rice (rinsed and soaked overnight)
3 3/4 cups water
2 pinches sea salt

Bring rice and water to a boil. Add two pinches of sea salt. Cover and lower flame to simmer for 40-45 minutes. Makes 6-8 servings.

Get sun

Get Sun

Lately a few clients have been diagnosed with a vitamin D deficiency. I have been hearing it more and more. Well….

GET SUN!
Yes we take fish oils, or we can try supplements, but what is our body really telling us?

GET SUN!
How has it come to be that we live our lives so that we do not get our nourishment from the sun that our bodies are meant to receive.
Do you recall studying in school that the plant life that really nourishes us gets its energy from the sun? Did you recall that plant life nourishes us as well?
My personal trainer & dear friend Arthur Mitchell taught me to put my water in a glass jar in the sun with a crystal to magnify the energy in absorbing the suns energy.
I guess we have forgotten that the sun & water nourishes us and helps all things grow.

Vitamin D deficiency: muscle pain, weak bones/fractures, low energy and fatigue, lowered immunity, symptoms of depression and mood swings, and sleep irregularities. Women with kidney problems or intestinal concerns (such as IBS or Crohn’s disease).

Vitamin D supplements or the sun? You decide.

Energy Soup with sea veggies

Ingredients

“4 cups water (or more as you add the vegetables)
1 Tbsp dulse flakes or kelp powder
½ apple, peeled and cored
½ cup sprouted lentils
½ cup sprouted mung beans
1 handful buckwheat lettuce sprouts (remove brown seeds if any)
1 handful sunflower sprouts (remove black seeds if any)
½ avocado
3 large kale leaves broken into small pieces, or 3 cups baby greens
Method

1. Blend completely all ingredients in the Vita–Mix until creamy. You want a very smooth mixture without any detectable particles of food.

2. Add more water to get to a thin consistency which makes it easier to drink. Fill completely to the top of the plastic container.”

Successful health…
By consistently carrying out simple tasks you will succeed at health and weight loss. Remember that slow & steady wins the race.

THE FOUNDATION-
The way to build a strong building is to have a properly constructed foundation. The foundation holds up the rest of the building. We use this analogy in constructing a strong and healthy body. This is your building so to speak.

The foundational tools are sleep, deep nourishment (sometimes this is 3 meals daily), and exercise.
Don’t let yourself drop below 7 hours of sleep a night, and get an extra hour when you can. Don’t skip meals, it does not serve your metabolism. Skipping meals generally leads to overeating and poorer choices. And don’t stop your exercise routine: it is vital to maintaining your outlook, energy, and physical body.
Whatever you need to do to support these basics are the key to success. This may include supplements or saying “no” to loved ones.

I support you in whatever that may be. Everyone will be better off in the long run.

EXERCISE-
If you have not exercised in a while please start slow. Once you have begun to exercise interval training is instrumental to achieving successful weight loss.

EMOTIONS-
If there are times when you are sad, angry or lonely, give yourself the time and space to acknowledge those feelings and be present with yourself. We can truly love and accept ourselves in those feelings. Release the energy around the feelings. Then open up to and enjoy the joy, beauty and awe in your life.

LOVE-
Express love and gratitude. Also focus on the positive. Make a written, or mental gratitude list part of your daily ritual.
Do what feels good while remembering that pushing, forcing and straining does not work. If something around you feels helpful, releasing, opening, strengthening, enlivening, and inspiring then do it! Remain open to the flow of what will work in your life easily.
(Other than things that you know are harmful like caffeine, toxic substances, junk food ie: sugar, staying up late & over indulging)
